Recipes: Panzanella Salad

This rustic Tuscan salad is a celebration of simple, fresh ingredients – think juicy tomatoes, crisp onions, and cubes of bread that soak up all the vibrant flavors like little sponges of deliciousness. It’s the ultimate summer dish: light, flavorful, and perfect for sharing.

1/3 of a Olive & Thyme Sourdough, cut into 1.5cm cubes
olive oil, to coat cubes
4-6 tomatoes, cut into wedges
¼ cup red wine vinegar
¼ Tbsp good quality olive oil
2 garlic cloves minced
1 tsp Dijon mustard
½ red onion, thinly sliced
½ cup fresh basil
100g fresh baby mozzarella, torn apart
- Heat the oven to 180 degrees.
- Add bread cubes to a large mixing bowl. Drizzle with olive oil and season with salt. Toss thoroughly.
- Spread onto baking tray and bake for about 12-15 minutes or until golden.
- Place a colander over the same mixing bowl. Add cut tomatoes and sprinkle with a little salt. Toss to coat. Leave to sit for 2 minutes to allow some of the tomato juices to drain into bowl.
- Remove colander with tomatoes from mixing bowl and set aside in sink for now.
- In the mixing bowl with the tomato juices, make a dressing by adding red wine vinegar, second measure of olive oil, garlic and mustard. Mix well to combine.
- Then add in the tomatoes, bread cubes, red onion, basil and mozzarella to the mixing bowl and toss to coat with the dressing.
- Allow the salad to sit for 10 minutes bef

Hot Tip: Use old red wine as an alternative to red wine vinegar. Cut cubes ahead of time and store in freezer.
