Recipes: Fig & Walnut French Toast

When you start with great bread, the rest is easy. Our Fig & Walnut Sourdough is made with premium Canterbury walnuts from Trickett's Grove, a co-op of growers who know a thing or two about quality. Their nuts bring a natural crunch and sweetness to every slice, making this loaf the perfect base for something a little indulgent.

In this French toast recipe, we’ve layered creamy ricotta, a quick stewed blueberry sauce, and just a drizzle of honey for balance. Simple, seasonal, and best enjoyed warm with a coffee on the side.

Ingredients

  • 4 slices Volare Fig & Walnut Sourdough
  • 2 eggs
  • 1/2 cup milk (or plant-based alternative)
  • 1 tsp vanilla extract
  • Butter or oil for frying
  • 100g ricotta
  • 1 cup fresh or frozen blueberries (we love Monavale)
  • 2-3 tsp honey
  • Optional: lemon zest

Method

  1. In a small saucepan, combine blueberries with a splash of water. Cook over medium heat until berries break down into a sauce
  2. (5-7 minutes). Stir in honey and optional lemon zest.Set aside.
  3. Whisk eggs, milk, and vanilla extract in a shallow bowl.
  4. Dip each slice of fig & walnut bread in the egg mixture, coating both sides.
  5. Fry in a pan over medium heat with butter until golden brown (2-3 minutes per side).
  6. Spread ricotta on warm French toast.
  7. Top with stewed blueberry sauce.
  8. Optional: drizzle extra honey for added sweetness.
