Meet the Chef: Daniel Bellew, The General

We recently made a trip over to Mt Maunganui to catch up with Daniel Bellew – head chef of The General Cafe – to learn about his journey as a chef and how he is using Volare products in some of his dishes. Working as a chef for 10 years now, Dan has spent the past three at The General, a bustling cafe on Pacific Ave in downtown Mt Maunganui. Keep reading to learn more about Dan…

On his culinary style…

Dan told us that his menu style was usually inspired – or adapted to – the place where he works and the type of customer that place attracts. When it comes to the menu at The General, there is a strong focus on vegan and healthy options. Dan said that they try to source all of their products locally and are big on making everything they can from scratch, from the tomato relish to the seasonings.

On his education and experience…

Dan studied for two years at the Bay of Plenty Polytechnic, completing his Level 3 and 4 certificates in Culinary Arts. When asked what advice he would have for those interested in getting into the field, he said to drop the ego and to listen and learn from those that have been on the front lines. It’s hard going and definitely an emotional roller coaster but well worth it if you dedicate yourself and stick it out.

On his favourite Volare product…

As with many cafes that we supply, The General makes use of our San Francisco Sourdough more than any other bread, going through almost 100 loaves a week. Dan also claims it as his favourite Volare loaf because you can’t go wrong with it, it’s a good solid product that’s always good quality. We also spotted Volare Gourmet Seeded Burger Buns on display, as well as our Croissants, Ginger Slice, Caramel Slice, Pies and Sausage Rolls.

On his favourite thing about working in the industry…

Dan admitted that it’s a hard and thankless industry that will take a lot of your family and social time, but that you can’t beat the high of smashing out a 300+ cover service solo.

On his favourite type of cooking…

He said that nothing beats outdoor cooking with basic ingredients. Whether that’s a stew in the Dutch Oven over coals, a Hāngī, or smoking a 5kg brisket low and slow –  nothing flashy, just straight from the earth, letting the ingredients speak for themselves.

As always, it was a pleasure to catch up with one of the chefs that help to get our products out into the world. Working with a variety of Volare products throughout the menu, Dan truly knows how to keep things simple and make the products shine. From the mouth-watering sandwiches in the cabinet to the juicy burgers hot off the grill, there’s something at The General Cafe that everyone can enjoy.
