Recipes: Chicken, Rocket & Mayo Sandwich

There’s something pretty hard to beat about a proper chicken sandwich. Especially when it’s made with soft, fresh bread that can actually hold its own.
Our new pre-sliced Seeded Sandwich Loaf was made for exactly this sort of thing. Soft enough for packed lunches, sturdy enough for generous fillings, and finished with a light scattering of seeds for a little extra texture and flavour.
This chicken, rocket and mayo sandwich is simple, reliable and worth keeping up your sleeve. Great for lunches, road trips, feeding a crowd, or making use of leftover roast chicken from the night before.
Worth noting – the seeded loaf adds a nutty crunch and structure, so you can be slightly more generous with filling than soft white bread.
Ingredients
- 1/2 roasted chicken (about 2–2½ cups shredded meat)
- 8 slices Volare Seeded Sandwich Loaf
- Butter, softened (for spreading)
- ¾ cup good quality mayonnaise
- 1 tsp Dijon mustard
- 1–2 tsp lemon juice (to taste)
- Small handful rocket
- finely chopped Salt + black pepper
Method
- Make the rocket mayo
- Mix mayonnaise, Dijon, lemon juice, and chopped rocket together until creamy and flecked green. Season well with salt and pepper.
- Prepare the chicken filling
- Shred the cooked chicken into bite-sized pieces.
- Stir through just enough rocket mayo to lightly coat the chicken (you want it creamy, not swimming in mayo).
- Assemble the sandwiches
- Lightly butter each slice of Volare seeded loaf (this helps stop sogginess and adds richness)
- Pile chicken mixture onto 4 slices of bread
- Opt. Add a generous handful of fresh rocket
- Top with the remaining slices of bread
- Serve
- Cut in half or diagonally and serve fresh or make a packed lunch for later.
