Project Local: Kane’s Strawberries Are Back

Back for another season — and for good reason.

Some collaborations just make sense. When strawberry season hits its stride, Kane’s Strawberries is the name everyone in the Waikato knows. Family-run, chemical-free, and proudly local, their berries are the kind you can smell before you see: deep red, juicy, and warm from the sun. We’ve baked with them before – you might remember last year’s Project Local feature — and the response made it clear we needed to do it again.

This time around, we wanted to build something that matched the fruit. Something bright, generous, and a little bit celebratory. So we landed on two things:

The Strawberry Shortcake – layers of shortcake, strawberry compote, almond frangipane, baked Kane’s strawberries, and a strawberry glaze, finished with Swiss meringue buttercream custard and a dusting of strawberry powder. A proper summer treat.

The Strawberry-Coulis Matcha – bright, fresh, and surprisingly balanced. It’s not too sweet, not too heavy, just a really good way to taste the season in a glass. We make it using Morning Made Matcha, now available in our online store if you want to recreate it at home.

Both are in stores right now and popping up at the Farmers Markets – but only until Christmas, or until the berry crates run out (which, if you’ve ever shopped at Kane’s, you know can happen fast).

Working with producers like Kane’s is the best part of summer for us. It’s simple: better ingredients make better baking. And when those ingredients come from people who genuinely care about what they grow, the final product speaks for itself.

We’ve got one more strawberry-and-cream idea in the works too… but we’ll leave that surprise for later.
