Before we had a name, a brand, or even a bakery, there was just a guy baking bread in his garage and showing up at the local Farmers Market.

That guy was Ryan – now Volare’s co-founder and Head Baker – back when baking was still a weekend hobby and the idea of opening a bakery was just a dream. The Waikato Farmers Markets were our testing ground, and in many ways, they still are.

These days, you’ll find Ryan’s parents, Kay and Gareth, running our Volare stand every weekend. They’re the friendly faces behind the stall, rain or shine, serving fresh sourdough, pastries, and a good dose of market banter. It’s a big job every week, but it keeps us grounded and connected to the community that supported us from day one.

We’re proud to be among some of the Waikato’s best growers, makers, and food producers — and even prouder to still show up, week after week, to see familiar faces (and meet new ones).

You’ll also find Lucy's Gluten Free range at both markets, and during winter, we’re also serving hot soups every Sunday at Claudelands to keep your hands (and belly) warm while you browse.
