Recipes: Smoked Salmon Everything Bagel

Bursting with vibrant flavours and hues, this recipe is a celebration for bagel enthusiasts. The harmonious blend of creamy textures, smoked salmon's richness, zesty pickled onions, and the brightness of lemon zest create a delicious symphony that encapsulates the essence of summer.
Ingredients:
- 4 Everything Bagels
- 1/2 cup cream cheese
- 230 grams smoked salmon
- Homemade pickled red onions (recipe below)
- Fresh dill
- Fresh chives, chopped
- Lemon zest (from 1 lemon)
- Capers, drained
- Salt and pepper to taste
For Homemade Pickled Red Onions:
- 1 large red onion, thinly sliced
- 1 cup white vinegar
- 1 cup water
- 2 tablespoons sugar
- 1 tablespoon salt
- 1 teaspoon whole black peppercorns
Instructions:
Make Pickled Red Onions (prepare ahead):
- In a saucepan, combine white vinegar, water, sugar, salt, and black peppercorns.
- Bring the mixture to a boil, stirring until sugar and salt dissolve.
- Place the thinly sliced red onions in a clean glass jar.
- Pour the hot pickling liquid over the onions, ensuring they are fully submerged.
- Allow it to cool to room temperature before sealing the jar and refrigerating. Let it pickle for at least a few hours or overnight.
Make Bagels:
- Preheat your oven to (175°C).
- Slice each everything bagel in half.
- Place the bagel halves on a baking sheet and toast them in the preheated oven until golden brown.
- Spread a generous layer of cream cheese on each toasted bagel half.
- Top with slices of smoked salmon.
- Add a handful of homemade pickled red onions on each bagel.
- Sprinkle capers over the pickled onions.
- Sprinkle fresh dill and chives over the pickled onions.
- Grate lemon zest over the bagels for a burst of citrus flavor.
- Season with salt and pepper to taste.
- Serve with slices of lemon on the side for an extra zing.
