If you’ve been lucky enough to grab one of our Asparagus & Crème Fraîche Danishes lately, you’ve tasted some of the best the Waikato has to offer – thanks to our friends at Greenfern Les Asperges

Based between Hamilton and Cambridge, Greenfern has been growing premium asparagus since 2003. What started with Bill and Irene Cummings has now become a true family affair, with their son Hadyn managing the block alongside them. Over the years, they’ve experimented with different varieties – from classic Jersey Giant to beautiful purple and white asparagus – and transitioned their operation to fully organic, using natural inputs like seaweed and molasses to keep their soil thriving.

The asparagus season is short and sweet, running from September through to just before Christmas, with daily picking no matter the weather. Their fresh, organic spears are loved by chefs around the country and by locals who spot them at the Waikato and Tauranga Farmers Markets most weekends.

We’ve been proud to feature Greenfern’s asparagus in our seasonal savoury Danish these past few weeks – a light, flaky pastry loaded with fresh asparagus, creamy lemon crème fraîche, and a touch of Gruyère. But just like asparagus season itself, it won’t be around for long.

So if you haven’t tried one yet, now’s your moment. Pop into your local Volare store this week and grab one while you can. Once the season’s over, we’ll all be counting down to next spring.
