She’s usually the first to arrive and the last to leave – calm under pressure, coffee in hand, and somehow still laughing through the lunch rush. We caught up with Nicola Wilson, manager of Volare Cambridge, for a quick chat about mornings, music, and what makes the place tick.
What’s the vibe here?
Upbeat, cozy, a bit cheeky. It’s the kind of spot where everyone knows your name – or at least your coffee order.
Who’s coming through the door most days?
Mostly locals and commuters. Some pop in daily, others just on Saturdays. But everyone gets folded into the routine pretty quickly.
Favourite part of the day?
Late mornings. Once the early rush slows, there’s space to breathe and actually talk to people. It’s the sweet spot before the lunch crowd hits.
Go-to order right now?
The Chimichurri Chicken Sandwich. The bread’s ridiculous. I didn’t think I liked spice – turns out I do. And the Raspberry Lamington for something sweet!
How would you describe the team?
Tight. We’ve found a rhythm – everyone’s got their strengths, and we trust each other. There’s a lot of laughing, some dancing, and definitely too much singing.
Something people wouldn’t know happens behind the counter?
There’s a silent language – one look and everyone knows what needs doing. It’s like choreography, but with more coffee and fewer straight faces.
What makes Cambridge special to you?
The people. It’s real. We’ve built a place that feels like the town – warm, easy, and full of regulars who’ve become friends.

Cambridge is the perfect spot to stock up before you hit the road. The team will be well-stocked and well-staffed on Christmas Eve, so if you’re passing through on your way to the coast, swing by for fresh bread, pastries, and a proper coffee to set you up for the day.
